Atmosphere

Trilby's reopened in 2023 inside its original wood-frame building on Bienville Boulevard after a top-to-bottom renovation that kept the building's bones and added crisp white tablecloths, a wine case at the entrance, and a fountain in the lobby. The main dining room runs warm and wood-trimmed; four private rooms branch off it, including a chandelier room lit with crystal and a soundproofed room built for business dinners. A jazz playlist plays low behind the conversation, and the bar up front pours classic cocktails alongside a serious bourbon and whiskey list. It's dressed-up but not stiff — the kind of room where a table lingers over dessert.

What to Order

Start with the Oyster Trilby, Gulf oysters broiled under a crust of Parmesan and white cheddar, or the bacon-wrapped stuffed figs with goat cheese and balsamic. The kitchen's signature is Trout Trilby, a pan-seared fillet topped with crabmeat au gratin and broiled until the top browns; Trout Almandine, the classic brown-butter-and-almond preparation, is one of the recipes carried over from the original restaurant. Blackened Redfish Pontchartrain arrives over capellini with a fried soft-shell crab riding on top, and the pork shank comes sous vide over mushroom risotto. Save room for Bananas Foster, flambéed tableside for two, or the pecan pie.

Trilby's serves lunch Tuesday through Friday, 11 a.m. to 2 p.m., and dinner Tuesday through Friday, 5 to 9 p.m., plus Saturday from 4 to 9 p.m. It's closed Sunday and Monday. Reservations aren't required but are worth making on weekends; book through OpenTable, and call ahead directly if your party runs larger than six. There's a private lot on site, so parking isn't the scramble it can be elsewhere in Ocean Springs. Dress runs business casual: collared shirts and sundresses, not shorts and flip-flops. Service can lag when the room fills up, based on more than one account, so build in time rather than rushing to a show. For a splurge dinner in Ocean Springs, it's hard to beat.
